Abstract
In the footsteps of the 1821 revolutionaries, we follow their way of life, focusing on their eating habits. Through research of the University of the Peloponnese and in collaboration with Gastronomos magazine, the ingredients and recipes of that time have been identified. The ingredients, the flavours but also the general eating habits of the time are the reference to a special menu, 12 unique recipes developed by popular chef Lefteris Lazarou. The menu called “The Dishes of the Revolution” consists of three cooked dishes, a salad with typical Peloponnese products, 4 meat and 4 seafood options. Highlighting the great wine tradition of our place, the Master of Wine Konstantinos Lazarakis chooses for each recipe a special variety of wine from the Morea. The purpose is to adopt these recipes from restaurants in the Peloponnese and offer them to visitors to the area.
